Ingredients :

  • 2 cups all-purpose flour3/4 cup 100 per cent pure cocoa

    1 teaspoon baking soda

    1/2 teaspoon salt

    1 1/3 cups white granulated sugar

    3 cups shredded zucchini

    1 cup sour cream

    8 tablespoons butter or 1/2 cup, melted

    2 eggs

    2 teaspoons vanilla extract

    1 cup chocolate chips (I used semi-sweet)

    1/2 to 1 cup chopped walnuts or pecans

Directions :

  1. In a large mixing bowl whisk together the flour, cocoa, baking soda, salt and sugar.  Add shredded zucchini, sour cream, butter, eggs, vanilla extract and mix well with a spoon.  Fold in chocolate chips and nuts.  Spray a 9 x 13 baking dish with cooking spray.  Add your brownie mixture.  Bake in preheated 350 degree oven for 35 to 40 minutes.  Ovens vary so check to make sure they are done.
