- 1 box (16 18 ounces) package of lemon cake mix.
- 2 eggs.
- ⅓ cup of vegetable oil.
- 1 tsp of lemon extract.
- ⅓ cup of confectioner’s sugar.
- In a large bowl, pour the cake mix, add in eggs, oil and lemon extract and mix until well combined.
Drop teaspoonfuls of dough into a bowl of confectioner’s sugar and coat lightly.
Place the cookies on an ungreased cookie sheet and bake for 6 to 9 minutes in a preheated oven to 375 degrees.
