Ingredients :

  • 1 (21 ounce) can apple pie filling (I use Duncan Hines Original Country Apple Pie Filling)2 cups all-purpose flour

    1/2 cup white granulated sugar

    1/2 teaspoon salt

    1/2 teaspoon baking soda

    1 1/2 teaspoons baking powder

    1 teaspoon ground cinnamon

    1 teaspoon vanilla extract

    1 1/2 cups buttermilk

    3 tablespoons butter, melted

    2 eggs

    1 cup nut pieces, Optional

Directions :

    1. In a large bowl whisk together the flour, sugar, salt, baking soda, baking powder, and cinnamon.  Add the vanilla extract, buttermilk, melted butter and eggs.  Mix well with a spoon.  Spray a 12 cup muffin tin, add about 1/4 cup batter to each cup.  Drop about 1 tablespoon of the apple pie filling into the batter.  Sprinkle nuts on top.  Bake in a preheated 375 degree oven 25 to 30 minutes until brown on top.  Makes 18 muffins.
